A canned mixture of soy and kidney beans, spices, and seasonings, this thick brown sauce is hot and spicy. Hot bean sauce, which is not smooth but actually contains pieces of bean, is used in Hunan dishes. Taste a very small amount before using, and adjust the amount called for in a recipe according to how hot and spicy you like foods. Hot bean sauce can be used to add color, spiciness, and texture to many meat, poultry, fish, and vegetable dishes. Sold in small cans in Asian groceries, the sauce should be refrigerated once opened.
